Day 2 of
Operation Fill the Cookie Tray.Today’s
cookie is my brother’s favorite (and my daughter’s).The challenge of these cookies is finding the
primary ingredient, Mint Chocolate Chips, preferably Hershey’s.The recipe was on the back of the bag of
Hershey’s Mint Chocolate Chips (just talked to my sister & it was not on the back of the Hershey bag but was originally from Nestle, guess Nestle used to make bags of mint chips) and was quickly added to the family cookie
list.My mom, like me, has to try all
the new flavors of chips as they come out.The problem is when you find a recipe you adore and the company stops producing
the chips.Or makes them in limited
quantities, for Christmas only, and distributes them to limited outlets (this
is what Hershey does with these chips).When we stumble upon these chips (or track them down) we tend to buy
them in quantity and horde them.One year
I found them at a small grocery store in Pennsylvania after the holidays and
purchased all the bags on the shelf. The
cookies are just that good! Other brands of mint chips will work but the
originals are still the best.
The plan
today was to make the Mint Snowballs because my youngest daughter is home and
the cookies must be rolled in sugar.
I
REALLY don’t like rolling things and she likes to help so perfect plan….but you
know what happens to perfect plans, they never work out.Teen angst and her senior project intruded so
I ended up rolling 3 of the 4 dozen cookies alone (she felt bad and rolled the
last dozen for me).
The cookies
are minty and refreshing and the perfect addition to a cookie plate.Hope you enjoy them!!
2 ½ cups flour 1 ½ tsp baking powder ½ tsp salt 1 ¼ cups sugar, divided ¾ cup vegetable oil 2 eggs 1 tsp vanilla extract 1, 10oz pkg of Mint Chocolate Chips
Preheat oven to 350.
In a medium bowl combine flour, baking powder, and
salt. Mix and set aside. In a large bowl combine 1 cup sugar and vegetable
oil. Mix well. Beat in eggs and vanilla extract. Gradually add in flour mixture. Stir in mint chips.
Shape into balls using a rounded Tablespoon of dough. Roll dough balls in remaining ¼ cup of sugar. Place on a cookie sheet covered with parchment paper.
